Vinification

BRUTAL! Orange 2021 from Domaine Matassa

A pure Macabeu, with a total of 4 weeks on the mash (=skin contact during fermentation). This is completely rich stuff. After spontaneous fermentation, the wine is aged in neutral demi-muids with 600L capacity, then bottled unfiltered. Extremely limited, so be quick. Like all natural wines at Matassa, there is no addition of sulfur or other additives, the work in the vineyard is in full focus here, and this is expertly demonstrated.
