The black wine of Cahors, as it has been known since medieval times

Valerie Courregés has it all: after stations such as Château-Lafite in Bordeaux, in Chile, California and in Provence, she took over the technical management of a domaine in the southwest of France and then bought the Causse Maiusonneuve vineyard in Cahors. She was able to acquire 11 hectares with great potential and immediately began to convert the old vineyards to organic and partly biodynamic farming.

The soils are a mixture of clay and limestone and are rich in iron, which gives the wines great structure and density. The grapes are fermented in small concrete tanks with indigenous yeasts, where extractions ensure the gentle extraction of flavours. Aging then takes place in sandstone jars and concrete tanks and are neither filtered nor racked, their wines are purist and well-defined.
