Domaine des Ourobores

They still exist - the small, quiet wineries that escape the hype wave. For us, Domaine des Ourobores is the needle in the haystack we've been looking for. Because when we were finally in the region in August, we made our perfect find in the Jura with Nicolas-Julian.

With a PhD in chemistry under his belt, NJ initially embarked on an academic path. But his passion for wine prevailed, and after valuable internships at Philippe Chatillon, Domaine La Lou and in Switzerland, he has been realizing his own vision of terroir wines since 2019 and founded Domaine des Ourobores.

Outside Arbois, he found plots of land in absolute silence and complete seclusion - without roads or neighbors, pure nature. And that's what it's all about: For NJ, the lieut-dit concept counts, in which he cultivates each parcel separately and thus preserves the special character of each location. The 2023 harvest produced powerful white wines and expressive red wines that deliberately do not follow the light red wine style of the region.

The Domaine des Ourobores cultivates around 4 hectares - planted with the Jura classics Ploussard, Trousseau and Savagnin as well as Pinot Noir, Gamay and Chardonnay. Everything here is made by hand - a real low-tech winery that relies on meticulous vineyard work and doesn't give an inch. Compromises? Not a chance. Only the pure, unadulterated expression of the soil counts.

In addition to Domaine wines such as Grandvau Côte Chaude and Brise Glace, NJ produces exciting Negocé wines from organic winegrower friends in Alsace, Languedoc and the northern Rhone.
