Vinification

FKK Fizz 2021 from Schmitt

Coming from biodynamic farming, the grapes of Blauer Portugieser and Dornfelder are pressed directly after the hand harvest, which ensures lots of juiciness and freshness. After spontaneous fermentation, the juice remains on the full lees for six months and then finds its way into the pressure tank before the second fermentation starts for another three months. Unfiltered and with minimal sulphur addition, the FKK FIZZ Rosé 2021 is bottled - until someone can't wait to pop the crown cork again.
