Our take

Savagnin ‘ouillé’: nicht oxidativ. Ätherisch mit reifer Zitrusfrucht, eingefangen von brillanter Säure und feinstem Tannin. Salz auf der Zunge. Am Gaumen zartes Fruchtextrakt – subtil, aber präsent. New-School Jura, wie es knallt und lebt.

Vinifizierung

Brise Glace 2023 von Domaine des Ourobores

100% Savagnin ouillé ausgebaut, neben Chardonnay die wichtigste Rebsorte im Jura. Zu Deutsch: Weißer Traminer. Stammt von kalkig blauen Mergelböden eines befreundeten Bio-Winzers aus Arbois und wird im Keller der Domaine des Ourobores ausgebaut. Die Ganztrauben werden über 5–12 Stunden langsam gepresst, was dem Wein eine subtile Textur verleiht. Der Brise Glace wird anschließend spontan im Stahltank vergoren – salzig, leicht cremig und unverkennbar Jura. Wie alle Naturweine der Domaine des Ourobores wird auch der Brise Glace 2023 unfiltriert und mit minimaler Schwefelgabe abgefüllt – purer Jura-Charakter in Perfektion.
