Vinification

Pet Nat de Liv, Zero Brut 2021 from Liv Vincendeau

100% Chenin Blanc from 60-year-old vines on green and purple slate of volcanic origin. Liv's Pet Nat is finely balanced and has a lot of pressure - rare for Pet Nats! Domaine Vincendeau has worked organically from the beginning, and biodynamically since 2019. Spontaneously fermented, the must is briefly cooled and gently separated from the yeast, where the Petillant Naturel then continues its fermentation in the bottle. Disgorged after six months of ageing. The Pet Nat de Liv 2021 smells of quinces, lemons and apples, with a light mineral touch and fine carbonic acid - the perfect uncomplicated aperitif with zing! Like all Liv Vincendeau wines, it is unfiltered and bottled with minimal sulphur.
