From ripe fruits to herbaceous and back again. Never loud, always cool. Despite its age the wine is not a bit tired, but alive and infinitely elegant.

Vinification

Sauvignon Blanc 2017 from Rebenhof

The grapes were carefully harvested by hand and come from 20-40 year old, partly very steep vineyards from the Witscheiner Herrenberg and Ratscher Nussberg which grow respectively on sandy marl and gravel soils, also called Opok. In the cellar follows a short 1 week maceration including stems, aging takes place in stainless steel tanks. In the spring of 2021, after three years on the fine lees (sur lies) bottled without further additions and unfiltered - nothing comes in and nothing comes out. It is remarkable what vitality and delicacy Hartmut's wines possess, that is simply fun to drink and is infinitely elegant. Brilliant stuff!
