Ergastoline 2019 by Patrick Bouju

One of Patrick Bouju's rarest natural wines. Ergastoline is another Negoce wine and is made from 100% Bergeron, also known as Roussanne, from the Savoie region in the foothills of the Alps. The grapes come from none other than Gilles Berlioz, who makes one of the best Roussanne wines. Incidentally, the cool label was designed by Aurelien Lefort, a natural wine producer from Auvergne. The grapes are destemmed and macerated on the skins for a long time, then matured oxidatively in used wood. Ripe, exotic and unique. Roussanne as a mash-fermented wine always produces wonderful tea aromas and a fine tannin structure. Like all Natural wines from Justine & Patrick Bouju Ergastoline 2019 is naturally bottled unfiltered and unsulphurized.
