Steiner Silvaner 20-24

The Steiner Silvaner is Jules and Kai's most personal project and their loudest argument. 100% red slate, steep and steep slopes in Hipping and Rothenberg in Nackenheim, ungrafted Schätzel clones with 30 to 40 years on the hump, small, thick-skinned berries, selective hand-picking in several passes. Biodynamically cultivated, Demeter-certified. Five vintages from 2020 to 2024 are aged together in 1200-liter oak barrels for an average of 28 months, bottled in September 2025. After the harvest, 36 hours of cold maceration, the mash is punched down with the feet, then unfiltered and with all the lees directly into spontaneous fermentation in the barrel. All batches mature under flor yeast, which formally makes it a country wine and removes it from any official classification. What it gets in return: a complexity, stability and inner tension that no estate wine Silvaner knows. Unfiltered, without fining, no added sulphur in the barrel. The Solera system turns five very different vintages into a coherent whole. On the nose: matcha, crunchy quince pear, salted lemon, seaweed, a hint of kombucha. Herbaceous, citrusy, flinty in the mouth, with nutty depth and a salty finish that lingers. Silvaner as a tool, hipping as an argument, flor yeast as an attitude.
