With a little air, Doma undergoes an impressive transformation: Mediterranean herbs become Earl Grey and chamomile, wow! Fantastically structured and endlessly elegant.

Vinification

Doma 2021 from Naboso

Doma is a cuvée of Welschriesling, Grüner Veltliner, Roter Sylvaner and Roter Traminer with a total maceration time of 14 days before gentle pressing. Ageing takes place for one year in 500-liter acacia and oak barrels, followed by a further 2 years of bottle ageing until Doma has reached its full potential. The aroma is reminiscent of Matassa's orange wines, with many hints of Mediterranean fruit and herbs. In recent years, Doma has become increasingly elegant and structured. After some time in the glass, it develops more and more in the direction of Earl Grey and chamomile, crisp stuff, totally lively and unique. Definitely a very universal food companion. Like all natural wines from Naboso, Doma 2021 is bottled unfiltered and with minimal added sulphur.
