Vinification

Hüpnos 2019 from Sous le Végétal

100% Gelber Muskateller, gewachsen auf kalkhaltigen Basaltböden auf der Insel Samos, Griechenland. Hüpnos, „Schlaf“ auf Griechisch, verdankt seinen Namen den Hängen des schlafenden Vulkans, auf denen sich die Terrassenanlagen befinden und welche nachts geerntet werden. 50% werden 40 Tage Tage lang auf den Schalen als Ganztraube im Stahltank vergoren, die andere Hälfte wird direkt gepresst. Anschließend im 500 Liter Stockinger Fass ausgebaut. Sous la Végétal ist ein Weinprojekt von Jason Ligas von der Domaine Ligas und Patrick Bouju der Domaine la Bohéme. Ziel dieses Projekts ist es, die verschiedenen Ausdrucksformen dieser Rebsorte in den unterschiedlichen Mikroklimata der Insel zu zeigen. Wie alle Naturweine von Sous la Végétal unfiltriert und umgeschwefelt gefüllt.

Sous le Végétal is a wine project by Jason Ligas and natural wine legend Patrick Bouju. On the volcanic soils of the island of Samos, they give expressive forms to the Muscat grape variety and remain true to their philosophy of intervening as little as possible.
