Vinification

Pet Nat de Liv, Zero Brut 2022 by Liv Vincendeau

100% Chenin Blanc from 60-year-old vines on green and purple slate of volcanic origin. Liv's Pet Nat is finely balanced and has a lot of pressure - rare for Pet Nats! Domaine Vincendeau has been working organically from the outset, and biodynamically since 2019. The must is fermented spontaneously, cooled briefly and gently separated from the yeast, where the Petillant Naturel then continues its fermentation in the bottle. Disgorged after half a year of maturation. The Pet Nat de Liv 2022 smells of quinces, lemons and apples, with a light mineral note and fine carbonic acid - the perfect uncomplicated aperitif with a kick! Like all Liv Vincendeau wines, it is unfiltered and bottled with minimal sulphur.
