Vinification

Hirschensuperreyn 2021 from Herbert Zillinger

The vines of Hirschensuperreyn come from the coolest site called Hohen Eck with northern exposure and grow on chalky loess soils. The neighbouring forest ensures slow ripening of the grapes and coolness, thus perfect harvest material. After slow, one-year fermentation in large wooden barrels, bottled unfiltered and without sulphur. On the palate, the Hirschensuperreyn 2021 presents itself dense and concentrated, but never stubborn or rebellious, always with traction. It all feels very vital, with a vibrant mineral and spicy touch on the tongue and a rich length! A bit more oxidative and funky than Hirschenreyn, but more open and with a slight oxi touch. Be sure to decant!
