Ölberg is the tranquil counterpart to Hipping—sun-kissed rather than electric, velvety rather than sharp. This VDP “Große Lage” on the Roter Hang in Nierstein is characterized by yellow fruit, charm, and a texture like warm silk. 100% Riesling from 40-year-old vines, rooted in iron-rich clay-schist, cultivated biodynamically according to Demeter standards. Hand-harvested in several careful passes to ensure perfect ripeness, treaded by foot, 12 hours of maceration, gently pressed, spontaneously fermented in 600-liter barrels, bottled in May 2026. Jule and Kai Schätzel harvest early and stop fermentation even earlier—a bold, almost defiant move. The result: just 7% alcohol—a gamble that pays off. So much freshness, so easy to drink that after the first sip, you’ll already be reaching for the second. Ripe citrus, apricot, white flowers, delicate herbs—all woven together in endless juiciness.
