How to Gut Feeling: Filtered water is tempered, the plants from the vineyards in Oggau — chamomile, yarrow, dandelion, wormwood, nettle and oak bark — macerated and brought to life with natural yeast cultures and a little sugar. Then the essential part happens: natural fermentation. Flavour is built. The starter moves together with further herbal extracts into the large fermentation tank — where everything is allowed to ferment for a week, to blend, to develop character. No shortcuts, no intervention. Just time, plants and microorganisms doing their work. After a few days, the liquid is gently pasteurised — preserving the fine bubbles without allowing alcoholic fermentation to take hold. No technical dealcoholisation, no stabilisers, no additives. What ends up in the glass tastes exactly as it sounds: delicately floral, herbaceous and dry, with citrus, apple, quince and a pleasant bitterness.
