La Trempette - Brut Nature Champagne 2021

A cuvée of Pinot Meunier, Pinot Noir, and, of course, Chardonnay from old vines on chalk-rich plots in Boursault in the Vallée de la Marne. The vineyards are cultivated using uncompromising biodynamic methods, with cover crops and a vibrant ecosystem of vines, trees, and animals. Gently pressed, Aurelien always works with the direct juice from the press, unclarified, spontaneously fermented with the vineyards own yeasts. The wine is aged reductively and without frills in old barrels to preserve the pure energy of the grapes. Two years of bottle aging on the lees ensure complex depth and the finest mousse. In the glass, La Trempette 2021 is citrusy, chalky, and linear—with beautiful tension, silky perlage, and crystal-clear drinkability. Brut Nature through and through. Like all of Aurélien Lemaire natural champagnes, La Trempette 2021 is bottled unfiltered and without any added sulfur.
