Vinification

Les Vieilles Branches Aligoté 2024 from Domaine Didon

An Aligoté with mineral depth and character! Domaine Didon's LES VIEILLES BRANCHES ALIGOTE 2024 comes from the AOC Bouzeron, more precisely from the vineyard of the same name in Chassey-le-Camp, just behind the winery above the village. The vines grow on yellow limestone with clay deposits - a terroir that gives the wine its powerful minerality. Biodynamically farmed and meticulously harvested by hand, the grapes are pressed as whole bunches and then matured for 10 months in used wooden barrels. The result is a multi-layered, delicate Aligoté with fruity elegance, earthy depth and a perfectly integrated acidity structure. Silky, lively and with an electrifying freshness - bottled unfiltered like all natural wines from Domaine Didon. This is what the new Burgundy tastes like!
