Domaine Didon stands for biodynamics without compromise and embodies the new, modern Burgundy

In 2017, Naïma and David Didon went all in. In the middle of the Côte Chalonnaise, they snapped up an old farm in Chassey-le-Camp to realize their dream of owning their own biodynamic vineyard - with heart, hand and unwavering respect for nature.

Chassey-le-Camp is part of the AOC Bouzeron - the only appellation in the whole of Burgundy that is committed to Aligoté. Here, on a tiny two hectares, surrounded by forest and far away from chemical-spraying neighbors, Domaine Didon lives uncompromising biodynamics. No bullshit, no compromises - simply pure, vibrant wine that stands for the new Burgundy.

David Didon: inspired in Volnay, shaped by Saint-Aubin

For years, David Didon was the man in charge of the vineyards at the legendary Domaine de Montille in Volnay - where he drove the conversion to biodynamics. However, he found his own signature through his friendship with Julien Altaber and Dominique Derain in Saint-Aubin. Their wines opened his eyes: true greatness is created without additives - pure, lively, unadulterated.

Minimal intervention, maximum character - the credo of Domaine Didon

In the cellar, Naïma and David follow a clear principle: trust nature. Minimalism with maximum outcome. Spontaneous fermentation, whole bunch pressing, zero additives - no frills, no filters, no new barrels. The red wines undergo a short maceration period of only 7-8 days, supported by gentle pumpovers. The white wines are pressed directly and placed in the barrel one to two days later to preserve their tension.

The result? Despite the inconspicuous appellation on the label, Domaine Didon shows that quality speaks for itself. These are Burgundies with soul - authentic, vibrant, unadulterated. Thanks to brilliant agriculture and zero additives in the cellar, Didon is making a statement and shaking up the new generation that is shaking up Burgundy.

Les Vignes Blanches: the historic vineyard and a real gem

Planted with old vines of Pinot Noir, Pinot Blanc, Chardonnay and Aligoté, the Vignes Blanches vineyard is a true jewel that rises majestically above the village. The vines grow on dense, yellow limestone and enjoy a perfect east-facing slope. Tractors are deliberately not used here - instead a horse is used in order to put as little strain on the soil as possible. Any other work? Pure manual labor.

The frost and mildew infestation of the 2021 vintage forced Naima and David to buy grapes from other organic winegrowers for the first time - a practice they want to continue until they can acquire more vineyards themselves. For the 2022 vintage, grapes from Beaujolais and Alsace will be used for the first time, as well as from neighboring vineyards in Chassey-le-Camp.
