Naturweiss VDP.GUTSWEIN 2024

Naturweiss 2024 is the first wine from Schätzel in which Kai and Jule has brought together all of his experimentation from recent years into a coherent whole. Riesling forms the DNA, along with Silvaner, Pinot Blanc, Müller-Thurgau and other varieties from biodynamically cultivated vineyards on the Roter Hang in Nierstein. The different musts were fermented spontaneously, matured in German barrels and half-barrels and aged in barrels for 12 months. What makes the Naturweiss 2024 technically special: The mashes had different standing times, sometimes whole grapes in grape bags were put into the fermenting musts and pushed under with the feet, so that the entire fermentation took place under a natural CO₂ protective layer. No orange wine, no oxidation, but everything as natural as possible. Individual batches matured under flor yeast, as is common in the Jura or with sherry. The result is not a compromise, but an attitude: precise, stable, pure-toned. In the glass, the Naturweiss has a clear, fresh aroma despite its cloudy appearance: green tea, meadow hay, boscoop, lemongrass. Lots of grapefruit freshness, drinkability and a slightly salty tang on the palate. Demeter-certified, unfiltered, minimal sulphurization in some batches, others completely without.
