Our take

Slightly more delicate and quieter than the Sous La Roche, yet highly complex. The smooth mouthfeel with the saltiness is pure pleasure. Matured as ouillée, so not oxidative.

Vinification

Savagnin En Billat 2018 from Domaine Ganevat

100% Savagnin from a small parcel around Grusse and Saint Laurent La Roche, growing on calcareous slate and marl soils. Slightly more voluminous and more pressure than the Chardonnay, yet finely textured with a delicate melt and long, salty finish. Careful hand harvesting with direct pressing, then aged for four years in amphorae as ouillée, i.e. not oxidative. Like all natural wines from Domaine Ganevat, unfiltered and bottled without the addition of sulphur.
