Ein Ausnahme-Weißburgunder! So feinmaschig, so eleganter Extrakt, so viel kühle Mineralik. Aromatisch verführen eine zarte Pfirsich, Kamille und gelbe Früchte von einem Glas zum nächsten. Groß!

Vinifizierung

Weißburgunder 350 N.N. 2023 von Odinstal

100% Weißburgunder von kargen Böden auf 350 Metern Höhe über Wachenheim. Das Terroir hier ist kühl, steinig und bringt diese puristische, salzige Stilistik hervor, die sich deutlich von der restlichen Pfalz abhebt. Andreas Schumann arbeitet akribisch biodynamisch, selektiert streng von Hand und verarbeitet nur absolut sauberes Lesegut. Spontan vergoren, anschließend mit viel Ruhe im Keller ausgebaut. In der Nase eine feine Reduktion, die an Feuerstein und Schießpulver erinnert, dahinter Pfirsich, Wiesenkräuter, Brotkruste und etwas Limetten. Am Gaumen extrem geradlinig mit Zug, kühler Säure und salziger Mineralität. Ein Weißburgunder 350 N.N., der kompromisslos geradeaus läuft und dabei doch Balance ausstrahlt. Wie alle Naturweine von Odinstal unfiltriert abgefüllt.

So hoch oben Wein zu machen, konnte man sich in den 90er Jahren in der Pfalz noch überhaupt nicht vorstellen. In Zeiten des Klimawandels wird das auf 350 Meter hoch gelegene Weingut Odinstal, welches über der Stadt Wachenheim thront jedoch Geschichte schreiben.
