Vinification

Bulles de Liv, Rosé Extra Brut 2021 from Liv Vincendeau

Cuvée of 83% Grolleau and some Cabernet Franc from a young vineyard and Chenin Blanc from 60-year-old vines on green and purple slate with crystalline quartz of volcanic origin. The Bulles de Liv Rosé Extra Brut 2021 appears finely balanced and super elegant - Champagne-like? Yes. The Extra Brut is bottled with a 3g dosage and undergoes a further 15 months of yeast ageing in tufa caves in Saumur. Liv Vincendeau has worked organically from the beginning, and biodynamically since 2019. On the palate, the Cremant de Loire Rosé seems incredibly fine, the long yeast storage pays off. On the nose it smells of rose hips and raspberries, on the palate ultra fine and delicate, what a finish! Like all Liv Vincendeau wines, unfiltered and bottled with minimal sulphur.
