Zymo

Zymo consists of Pinot Blanc and Pinot Gris, Roter Traminer, and Muskat Ottonel from the Heinrich winery, which grow on both sides of Lake Neusiedl: limestone and slate from the Leithagebirge meet the barren, gravelly soils of the Parndorfer Platte. The Heinrichs work strictly biodynamically, with a lot of manual labor and patience. After a short maceration period, the grapes are allowed to ferment spontaneously in the cellar, allowing their full complexity to unfold. The result is an aromatic orange wine that delights with juicy citrus notes, blood orange peel, a hint of floral spice and a firm structure. A natural wine that is easy-going and playful, but at the same time has depth and character - perfect for warm summer evenings, shared meals and long conversations. Like all of Heinrich's natural wines, it is unfiltered and bottled with minimal sulphur.
