Vinification

Rufo 2023 from Domaine Matassa

Rufo is 100% Macabeu, half pressed directly, the other half macerated on the skins for 4 days. The vines grow on limestone at around 400 meters above sea level. After spontaneous fermentation, the natural wine is left to mature on its lees in cement tanks and used tonneaux barrels. Like all natural wines at Matassa, no sulphur or other additives are added; the focus here is entirely on the work in the vineyard, and this is skillfully implemented. Rufo 2023 is incredibly fresh and animating, with a structure reminiscent of Matassa Blanc with a little more grip and finely chiseled acidity.

Matassa is Catalan and means thicket of a natural forest. Winemaker Tom Lubbe is one of the most progressive advocates of biodynamics and is regarded as an absolute visionary who has achieved cult status within two decades with his Matassa vineyard in Languedoc-Roussillon.
