Vinification

Zibibbo in Pithos IGT 2017 by COS

A seductive cuvée of 80% Zibibbo and 20% Grecanico from partly young vineyards from Marsala and Vittoria, in the south of Sicily. The grapes are fermented on the skins in terracotta amphorae, also called pithos, and then aged for another 2-3 months on the full lees in cement tanks. The wine tastes like an elixir and almost meditative, one notices already in the nose what vitality is in it. Expressive palate with ripe and expressive fruit opulence, but without any alcoholic heaviness and rounded off by a fine tannin structure, the wine also only reaches an extremely welcome 12%. Beguiling floral and herbal notes of white flowers, bergamot as well as sage and eucalyptus. A Sicilian revelation!
