Vinification

Manzoni Bianco 2021 from Foradori

Manzoni Bianco is a cross between Riesling Renano and Pinot Blanc and is grown on clayey limestone soils on the hill above Trento. Fermented in concrete tanks on the skins and then aged for a year in acacia barrels. Emilio Foradori and his team work extremely meticulously and with careful manual labour, every nuance is wonderfully perceptible and well thought through - everything is just well integrated. Compact and mineral structured with a charming melt. Extremely juicy in the mouth with a playful but intense finish, these are characteristics that make the Manzoni Bianco a diverse food companion.
