Vinification

Bourgogne Rouge 2023 from Domaine Didon

Old Pinot Noir vines on yellow limestone with clay form the basis for this exceptional Bourgogne Rouge 2023 from David and Naima of Domaine Didon. Their vineyards in Chassey-le-camp in the AOC Bouzeron are cultivated biodynamically - with great dedication, but without certification. After a 10-day maceration period, the grapes are pressed as whole bunches and matured in used wooden barrels. The result? An elegant, balanced Pinot with a silky mouthfeel and seductive fruit. Spiciness meets juicy berries, while the natural wine delights the palate with its fine structure and inviting juiciness. Bottled unfiltered and only minimally sulphurized - this is the new Burgundy at its best.
