This is what the new Burgundy tastes like! An Aligoté that brings gripping freshness and minerality. Lemon zest, juicy apples and light herbal spice meet a perfect acidity structure. Silky, animating and with a wow effect - Aligoté at its best!

Vinification

Bourgogne Aligoté 2023 from Domaine Didon

The Bourgogne Aligoté 2023 from Domaine Didon comes from the AOC Bouzeron, the stronghold of this grape variety, so to speak. The vines grow on yellow limestone, which gives the wine its taut minerality. Cultivated biodynamically, the grapes are pressed slowly as whole bunches and matured in used wooden barrels after a short maceration period. The result is an animating, precise Aligoté with crisp acidity, fruity aromas of lemon zest, apples and pears and a silky mouthfeel. Like all natural wines from Domaine Didon, it is bottled unfiltered and with minimal sulphur - an Aligoté with depth, drinking flow and an absolute wow factor!
