Susucaru Rossato 2021

The vintage 21 is named Rossato for the first time, due to its clearly more intense colour than the last years. The Susucaru Rossato 2021 is a blend of 85% Nerello Mascalese, some Malvasia, Alicante Bouschet and Uva Francesca grown from 6 different vineyards on the northern slopes of Mount Etna. The grapes are carefully destemmed, then fermented on the skins for 10 days for texture and some grip. The Susucaru Rossato is then aged in neutral, large epoxy tanks, then bottled unfiltered. Garnet red in the glass, very fine on the nose, lots of cherry, raspberry and wild strawberry. Silky mouthfeel with fresh acidity and tannin, together with the dark, volcanic minerality this results in an extremely elegant rosé equipped with good drinking flow. Whether summer or winter, rosé or light red wine a la Jura, Frank Cornelissen's Susucaru Rossato is a universal food companion, e.g. for pasta dishes with mushrooms or herbs, but also for game dishes.
