Vinification

Bulles de Schiste - Pet Nat 2021 from Terra Vita Vinum

Sparkling wine from slate - Bulles de Schiste. The Pet Nat Cuvée is made from 65% Chardonnay, 30% Cabernet Franc and 5% Chenin, using only young vines from several plots in Anjou Noir. As befits a Petillant Natural, the must is fermented spontaneously in the bottle and the natural carbon dioxide is produced. The slight residual sugar tail gives the Pet Nat a little more fruit and blends in perfectly. Aromatic white fruits such as peaches and pears emerge from the glass, as well as some brioche and yeasty notes. Playful, fragrant and with the finest perlage, the Bulles de Schiste 2021 is an absolute pleasure to drink. Like all natural wines from Terra Vita Vinum, it is bottled unfiltered.
