Savagnin 'ouillé': non-oxidative. Ethereal with ripe citrus fruit, captured by brilliant acidity and the finest tannin. Salt on the tongue. Delicate fruit extract on the palate - subtle but present. New-school Jura, Boom!

Vinification

Brise Glace 2023 from Domaine des Ourobores

100% Savagnin ouillé, the most important grape variety in the Jura alongside Chardonnay. In German: Weißer Traminer. Originates from the chalky blue marl soils of an organic winegrower friend from Arbois and is matured in the Domaine des Ourobores cellar. The whole grapes are slowly pressed for 5-12 hours, which gives the wine a subtle texture. The Ice cream breeze is then fermented spontaneously in steel tanks - salty, slightly creamy and unmistakably Jura. Like all natural wines from the Domaine des Ourobores, the Ice cream breeze Bottled in 2023 unfiltered and with minimal sulphur - pure Jura character in perfection.
