Fifty fifty: Chardo and Savagnin. Significantly more fruit extract, elegant and round. Some yeast, lemongrass and freshly grated almonds. Razor-fine acidity as precise as a katana. It makes us smile!

Vinification

Grandvaux x Côte Chaude 2023 from Domaine des Ourobores

Savagnin and Chardonnay - half each, perfectly balanced. Grandvaud X Côte Chaude is a secluded Lieu-Dit limestone vineyard of the Domaine, located near Arbois in the Côtes du Jura. The whole bunches are pressed slowly over 5-12 hours, which gives the wine a fine grip. The Grandvaud X Côte Chaude matures in used wooden barrels and is creamy, elegant and incredibly precise. Like all natural wines from Domaine des Ourobores, the 2023 vintage is bottled unfiltered and with minimal sulphur - pure Jura character in perfection.
