Vinification

Bigottiere 2022 from Terra Vita Vinum

100% Chenin Blanc from the prestigious Savennieres appellation at the top of the Côte des Forges - the neighboring vineyards of Nicolas Joly. Now is the time to listen up! The ancient vines grow on green slate with aeolian sands and produce only very low yields, but the grapes have incredible power and finesse. The fruit in the Bigottiere 2022 is completely reduced, with more salty and ethereal aromas dominating, accompanied by a sexy reduction that fades with air. And then this tension on the palate. Hammer! After slow pressing and spontaneous fermentation, the must is matured for 26 months in demi-muids, amphorae and concrete vats. The addition of sulphur varies depending on the vintage, but was omitted in the 2022 vintage. Like all natural wines from Terra Vita Vinum, the Bigottiere is bottled unfiltered.
