Our take

Pavillon rests completely in itself and glides over the palate like the finest silk. Spicy, highly exciting and carried by crystal-clear precision. Old vines, maximum energy.

Vinification

Pavilion 2023 from Terra Vita Vinum

100% Chenin Blanc from the Pavillon vineyard in the commune of Denée, just opposite the historic Bigottiere vineyard in Savennieres in Anjou, Loire. The old vines grow on volcanic rhyolite, also known as porphyry. Directly pressed and matured separately in 500-liter barrels, amphorae and concrete eggs and then cuveéed. The amount of sulphur added varies depending on the vintage; a small amount is added to the 2023. Like all natural wines from Terra Vita Vinum, the Pavillon is bottled unfiltered.
