Jura-Chardonnay with a twist: ripe apple peel, citrus, sourdough yeast notes. NJ conjures up a juicy style with super-fine tannins and a delicate creaminess - pure vin vivant!

Vinification

Zèphirine 2023 from Domaine des Ourobores

100% Chardonnay from chalky blue marl soils - pure Jura essence. This wine comes from an organic winemaker friend from Arbois and is refined in the Domaine des Ourobores cellar. The whole grapes are slowly pressed for 5-12 hours, giving the wine a fine-grained tannin. Zephirine is fermented spontaneously and matured in used wood - ethereal, slightly creamy and with lively citrus notes. So juicy that you can't help but smack your lips. Like all natural wines from Domaine des Ourobores, Zephirine 2023 is bottled unfiltered and with minimal addition of sulphur.
