Our take

Ein dunkelwürziger Mondeuse aus den Savoyen. Am Gaumen gibts satte, dunkle Früchte und eine feine Würzigkeit, alles sehr elegant ineinander verwoben. Patrick Bouju beweist erneut ein stilsicheres Händchen!

Vinifizierung

MO 2021 von Patrick Bouju

Mo steht für Mondeuse und ist ein weiterer Negocé Wein von Justine & Patrick Bouju. Die Mondeuse Trauben stammen aus den Savoye und werden nach 15 Tage Maischestandzeit behutsam abgepresst, danach ein Jahr in Amphoren ausgebaut. Aromatisch wird es dunkel: Pflaume, Sauerkirschen und eine schöne Würzigkeit. Es git aber auch eine florale Seite mit Holunder. Nach einiger Zeit im Glas wird es noch etwas fruchtiger. Am Gaumen elegant und mit feiner Säure. Wie alle Naturweine von Justine & Patrick Bouju ist auch der Mo 2021 selbstverständlich unfiltriert und ungeschwefelt abgefüllt.
