Vinification

Hirschensuperreyn 2023 by Herbert Zillinger

The vines of the Hirschensuperreyn come from the coolest location called Hohen Eck with northern exposure and grow on calcareous loess soils. The neighboring forest ensures a slow ripening of the grapes and coolness, thus perfect harvest material. After a slow, one-year fermentation in large wooden barrels, the wine is bottled unfiltered and without sulphur. On the palate, the Hirschensuperreyn 2023 is characterized by Herbert ZillingerDense and concentrated, but never stubborn or rebellious, always with a pull. It all feels very vital, with a vibrant mineral and spicy touch on the tongue and a full length! Slightly more oxidative and funkier than Hirschenreyn, but more open and with a slight oxi touch. And the whole thing zero / zero, without sulphur. Be sure to decant! Like all natural wines from Herbert Zillinger, bottled unfiltered.
